The federal Pasteurized Milk Ordinance sets the standards for everyone who produces milk, cheese or other dairy products. Farmers, truckers, bottlers, processors and equipment manufacturers from Maine to California all follow the same core rules. That means consumers don’t have to worry about lax regulations in another state.

“There’s a lot of checks and balances in the system,” Patrick Hansen says. Inspectors use a federal registry to keep tabs on producers nationwide without duplicating the entire inspection process.
